Dear Diary,
It may seem strange that I am writing about the Juiciest June, when clearly that time has come and gone. However, let me explain… I am finally getting the chance to recap my journey of juicing. Life kind of sweeps you away sometimes, I suppose. Nevertheless as I take a moment to reflect and relive some of these fine moments I had during my diet, I want it to be known how I truly enjoyed my Juiciest June.
During my Juiciest June diet, I came across flavors, colors, sweet aromas that filled my world with such richness of life. My perfect juicing partner helped keep me accountable through the process as we shared our triumphs and challenges together. Our energies helped motivate each other, even when we simply felt like being “bad” and having a snack outside of our set rules and restrictions of the game. It was so fun having the opportunity to recreate drinks and try recipes I have never thought of, thanks to Pinterest! I also had a wonderful time swaying and singing along to songs that matched my juicing experiences. And above all else, I felt a little more alive and healthy from adding more juices into my daily palette.

Even ten days later after this semi-intensive diet I put myself on, I feel thirsty to sip on some yummy liquids, just because. Juicing was very fun.
Although this juicing plan of has come to a close, I am sure I’ll be talking about and making a fuss over juicing every now and then. Especially since I am keeping my handy dandy mixer and juicing devices around.

Something I’ve already made a mental note about for the future is that I’d like to replicate somehow these juicing activities for the coming winter in January. It would be a great resolution and kickstart to the new year in 2021. God willing. I guess when something is as enjoyable as this juicing process has been, you just keep coming back for more.

Dear Diary,
Today is National Pineapple Day! In lieu of visiting a Dole Plantation in Hawaii or something fancy like that for the holiday, I resorted to a low key celebration and made a bunch of healthy non-alcoholic drinks for my friend! Also, I am still staying on top of my Juiciest June diet and below are my fave Pineapple Drink recipes. These are tried, true and taster approved. So much fun to make!! ♡

Healthy Pina Colada
Ingredients
1 handful of ice
1 cup frozen pineapple chunks
1/4 cup plain or vanilla yogurt
1/4 cup coconut milk
1/2 tablespoon unsweetened coconut
Instructions
Place ice, pineapple, yogurt, coconut milk in blender. Blend until smooth. Pour into glass.

Pineapple Hibiscus Tea
Ingredients
1/2 cup Pineapple Juice
1/4 cup hibiscus tea, chilled
2 tablespoons lemon juice
1 tablespoon honey
Instructions
Stir together pineapple juice, tea, lemon juice and honey, in glass. Add ice cubes, if desired. Pour into glass.

Aloha Pineapple Smoothie
Ingredients
1/2 cup fresh diced pineapple
1/2 cup sliced strawberries
1/2 sliced banana
1/2 cup vanilla Greek yogurt
1 cup crushed ice
Instructions
Place ice, pineapple, yogurt, coconut milk and regular milk in blender. Blend until smooth. Pour into glass. Top with coconut.

Pineapple Lemonade
Ingredients
1/2 pineapple chopped into pieces
1 lemon juiced
1/2 cup ice
Instructions
Place the chopped pineapple, lemon juice, into your blender. Blend until pineapple is liquified. Add ice. Pour into glass.

Dear Diary,
It’s the second week of my Juiciest June diet and 7 more days left to go till the finish line of this juicing journey. Everything has gone well so far. I am learning tons and exploring new levels of juicing. I do confess, while I have integrated juicing into my diet significantly — I had more than juices on both Sunday and Monday since it was Father’s Day and I had other festivities I had planned with my girlfriends (both of which required eating other foods than smoothies, juice, and salads). Alas, this will certainly not be my last juicing event, so all the more power to the next time I engage in another juicing.
Because I am transitioning into the second half of my juicing diet, I believe it is time to take it up a notch. These final days will largely focus on preparation, commitment, and creativity with my juices! Another juicing goal of mine is to seek out other vegetable and fruit items I would not usually stock in my fridge, such as wheatgrass and beet root.

I had one shot of this and began to feel noticeably charged from within!
There has been an overwhelming heaviness through some of these days with all that is happening in the world. This shot was the healthy boost I needed.

Dear Diary,
Four days in and I am still going strong on this juicing journey. Something I have enjoyed so far is the noticeable difference in my body’s system from the influx in consumption of raw juices and greenery. There have been very unique differences felt physically, mentally, and emotionally. My girlfriend and I even weighed ourselves and so far she has lost 3 pounds and I have lost 1 pound. Of course, this minor momentary ‘change’ is not indicative of the entire juicing process, but something worth mentioning as our diets are changing.
As I work through this diet a little more, I’ll be sure to share my favorite recipes. The recipes will include colorful photos of yummy eats and drinks one can enjoy during this diet. Get ready for it!

Dear Diary,
This month one of my girl friends and I decided to break out of our comfort zones and try something new. We have joined together for the Juiciest June everrrr, which entails a juice focused diet. Our diet will last from June 15 to June 30.
Now, due to our unique dietary concerns we tailored this diet to include salads, nuts, and servings of meat as needed. Really, what we are doing fundamentally is cutting out certain carbohydrates and artificial sugars. As for the meat, nuts, and salads that we are keeping in our diet — this decision was really important for us to make sure we had our proper daily nutritional intake goals met. So, although we are not completely living on purely juices, this will still be our juiciest June ever.. and you’re invited!

After coming back from the grocery store, I sat down with my fruits and vegetables, then had a photoshoot with my goodies. Typically, I am fawning over florals. Today, my subjects were different. The final product of my art can be seen below. I am impressed. I think I am going to really like this Juiciest June. More to come later ♡
