Dear Diary,


It’s Christmas Eve! Prior to our travels north of Seattle to Shoreline for an annual Christmas Eve holiday festivities, I poured myself a glass of classic eggnog. After all, ‘Tis the season to be jolly. And while I am not hot about the drinking, for special occasions I sure don’t mind having a toast or maybe even two ; )

Dear Diary,


Tonight is going to be a late night. There is no shortage of hustlin’ and bustlin’ around here this Christmas season despite all things happening in the world around me. To keep me going around the clock, I made myself a little Peppermint Mocha Latte for my late night ahead! Time for a bit of refueling!

Peppermint Mocha Coffee


Ingredients
1 Nespresso pod brew of Coffee, Onyx Blend
1 Peppermint Candy Cane
1 Peppermint Patty
Whipped Cream

Instructions
Brew coffee. Add candy cane and peppermint patty. Stir. Top with whipped cream. Top with peppermint candy cane.

Dear Diary,


It’s December and the holiday festivities have officially began! I spent most of the day dashing around completing errands and decorating our home. Now that I am cozy at home, I made myself a sweet treat to warm me up. Oh baby, it is sure cold outside! Especially these frosty mornings and almost chilly nights. However, this Gingerbread Man Express Cocoa was sure to please. Made simply by Swiss Miss Hot Chocolate a load of Jet Puff Marshmallows, and the tastiest and fun Gingerbread Trader Joe’s Cookie Mug Hangers.

Dear Diary,


Thirsty Thursday…We meet again on this cold fall day. I have been in such a funk that I neglected my usual celebratory tribute to drinking ‘some-what-healthy-but-moreso-fun’ drinks on the fifth day of nearly every week. I hope I didn’t leave anyone too thirsty in my absence. Good news is, I’m back for a little while longer now as the year comes to an end and I’ll be completing the end of my Thirsty Thursday series for 2020.

This week I decided to follow weather trends and made a chilling sugar baby pumpkin pie smoothie. It was not smart to do this, as a I was freezing after slurping away. However, I am glad I took some time out use some of my sugar baby pumpkins of the season for this Pumpkin Pie Smoothie. It tasted so wholesome and satisfying.

For a change, this week I decided to follow the chilling weather trends and made a cold Sugar Baby Pumpkin Pie smoothie. It was not smart to do this, as a I was freezing after slurping this drink away. I had to slip on my fuzzy socks and lots of layers of clothing to stay warm. Flocking around a cozy fireplace also helped once I devoured this pumpkin pie drink. Ultimately, I am glad used some of my sugar baby pumpkin puree preserved from this season for this Pumpkin Pie Smoothie.

Sugar Baby Pumpkin Pie Smoothie


Ingredients
1/4 cup of pumpkin puree
1 1/2 banana
1/2 cup of yogurt
1 cup of almond milk
4 ice cubes
2 Tablespoons of honey
1/2 ground cinnamon
Instructions
Blend pumpkin puree and banana. Add milk, ice cubes, honey, and cinnamon and blend. Top with whipped cream as preferred.

Dear Diary,


Helllo Thirsty Thursday of this ever beautiful fall season. Tonight I am sipping away on a warm Fresh Cinnamon Chai Tea. My taste buds are wrapping around the sweet aromatic, light hints of tea, milk, honey, and freshly ground cinnamon stick seasonings to top it all off.

Ingredients
1 cup of chai tea
1/4 cup of almond milk
2 Tablespoons of honey
1/2 ground cinnamon stick
Instructions
Seep chai tea into hot water. Warm the tea into a small pot with milk, honey. Ground cinnamon stick. Sprinkle cinnamon atop as preferred. Sip & enjoy.

Dear Diary,


In preparation for the upcoming flu season and potential second-wave of the Coronavirus, I am loading up on vitamin C. To compliment that with today’s Thirsty Thursday, I mixed one bag of Tangerine Emergen-C with a long stick of cinnamon and a few dashes of cinnamon. Fall spiced Tangerine Cinnamon -C for the win!

So I have actually never done this before, but after mixing it up and bringing the warm mug full of nutrients close, I thought, “How could this go wrong?”. This was an easy drink to have with its sweet aroma, simple spice, and warmth.

Tangerine Cinnamon-C

Ingredients
1 pack of Emergen-C Orange Flavor
10 oz of warm boiled water
1 cinnamon stick
a pinch of Saigon Cinnamon for sprinkling

Instructions Add cinnamon stick and Saigon Cinnamon into mug. Add hot water. Stir. Let cool. Drink Away.

Fall is in full swing around here as these lovely pumpkins keep showing up left and right, magically! ; ) With some left over pumpkin from my puree, I made myself a lovely little pumpkin white chocolate. So cozy  ♡

Pumpkin White Hot Chocolate

Ingredients
1/4 cup of White Chocolate Morsels
1/2 cup of pumpkin puree
1/2 Cup of Milk
1/2 Cup of half and half
1/4 teaspoon of cinnamon
1/4 teaspoon of ground cinnamon
pinch of ground cloves
pinch of nutmeg
pinch of salt
garnish with whipped cream

Instructions On Medium heat, add wet ingredients to pot. Add dry ingredients until mixed. Add garnishing and enjoy!

Dear Diary,


It’s the first of October! To witness the warm fall foliage colors outside my window makes me warm up with all kinds of excitement. Because I am feeling simply grateful for this day and new season, I felt an extra bit of motivation to celebrate by visiting the local Trader Joe’s where I stocked up on some cute baby pumpkins to bake for a tasty treat. With that, I made a Pumpkin Hot Cocoa to sip on tonight.

As of late, due to my busy schedule I have been opting for simpler recipes. This beverage is a win for an easy one. Basically, all I did was bake my sweet sugar baby pumpkin from Trader Joe’s, create a puree with my Kitchen Aide and once complete, I simply added a couple table spoons to a small pack of the Swiss Miss Hot Chocolate mix. In hindsight, I would have probably used my Cuisine Art Hand Mixer, rather than the Kitchen Aide, but oh well (next time). It was perfectly pumpkin as is. 🎃 🍂
